What is the difference between German, French and Japanese chef's knives and what should I be looking for?
I am frustrating to buy a knife 8 "chef, but there is a wide variety of knives on the face in. I think I've narrowed it down to brands Wusthof, Henckels, Sabatier and Victorinox, but I don ' have not yet become familiar with the way forward.
If you look at chef knives in particular, and all 3 are similar Gyutos graceful, French, German and Japanese (slash leader in Japanese).
The difference is the geometry of the blades. German lapidary style "belly", ie upwardly curved blade starts somewhere in the middle fraction.
I Henckel acceptable or Sabatier. I have both. I have a head of 6 inches and a head of 8 inches. I work with this 6 inches, but I know others who prefer the 8 (or 10). I do not yet have Santoku slash, but I decided to make one.
