Tucked away in a unclassified office park on Kiefer Boulevard is a salesman whose product is all but dark to the average home cook but is coveted by many of the country's top chefs.

MAC knives can be found in the French Laundry in Yountville, Per Se in New York Megalopolis and many points in between. Hawks Restaurant in Granite Bay has them. So does Lounge ON20. Bailiwick chefs in the know take pride in buying the same tools that Thomas Keller, Eric Ripert and Hubert Keller use.

Yet Harold Arimoto and his knives stay the underdog in the world of high-end cutlery, competing with better-known German companies whose advertising and confirmation budgets dwarf Arimoto's.

"We're probably not even a blip on the radar, but that's OK," Arimoto said interior his tiny office and showroom. "We have more business than we can handle."

MAC knives are manufactured in Japan. Arimoto, who has lived in Sacramento for identically six decades, uses his hometown as his base of operations. He travels often. He recently made a five-day disconcert to Las Vegas to show his product lines to some of that city's top kitchens.
