what does high carbon content do for knives?

 I plan to buy a set of Henckel knives. I noticed that some models have the carbon content and intoxication are just fortify forged steel. what is the difference? which is better? if you can suggest models of the Henckel that would be superb.

 excited carbon knives gives them strength and produces a sharp knife that stays sharp longer than steel. On the negative side, however, they pit and discolor when they contract into contact with moisture.
